For a communications project my wonderful now co-RD and I did a food demo on quick and easy lunches and snacks for truck drivers. We decided to do salmon patties and oatmeal cups. Don’t ask me why...
Now my Dad is a truck driver, working oh so tirelessly during these times. He wakes up at 6 AM and sometimes won’t get home until past 9 PM. How do you prepare all of your meals and snacks, and keep it food safe??? Does a balanced diet even exist???
I thought back to this project, and I’m not the biggest fan when it comes to energy bites, but I’m sure my Dad would be and he was!
So for anyone on the road ALL DAY or if you just want to curve your sweet tooth, TRY IT OUT! Let me know how it goes, and you can freestyle with these energy bites.
Peanut Butter Date Energy Bites ⚡️
1 cup of Medjool dates (about 10 dates), pitted and soaked in warm water for 15 minutes
1 cup of oats
1/2 cup of peanut butter
1/4 cup of peanuts
1/4 cup of unsweetened shredded coconut
1 tablespoon of flaxseed
*** SURPRISE INGREDIENTS
1/4 cup of chocolate protein powder (I ran out of cocoa)
Handful of chocolate chips
Blend or mix it all up in a food processor or blender. Then form them into balls, you’ll get roughly 16 bites.
